The cooking oil above the heating element will stay at an ideal frying temperature of 325 degrees to 345 degrees while the oil below the element will stay cool. The debris from the frying food will fall into the cooler oil in the lower track that never gets above 98 degrees. As a result, the scorched and burned food partials will not have an opportunity to recirculate into the hot cooking oil. The cooking oil that you are using will stay fresh and clean. With the Fantastic Fish Fryer you will get 30 uses from the cooking oil before you have to change it. With this Fryer the savings on cooking oil usage is about 70%. Another benefit of the Fantastic Fish Fryer is safety. The baskets are loaded in the up position and then lowered into the oil reducing the chances of hot oil splashing on the cook. When the food is done the basket is raised and placed on the draining hook before emptying. Once the temperature is set for cooking you will not have to continue adjusting the heat. There is very little temperature drop from placing a basket of food into the oil. Foods cook faster and absorb less oil.
